The Vail Valley is known for its renowned cuisine and in June we welcomed another superb eatery to Edwards, Colorado. We are excited to announce our new resident restaurant, Mountain Fish House & Oyster Bar. Mountain Fish House gives our guests a local, casual dining option with outstanding seafood.
Co-Owners Brian Nolan and Lily Doran are long-time restaurateurs with successes across the country. This time, they teamed up with the idea for a fun, casual seafood establishment in their beloved Vail Valley. Nolan has a long history in the Vail Valley with restaurants like Blue Moose Pizza and The Vail & Beaver Creek Chophouse. Doran has opened restaurants across the country from Chicago to New York City, and most recently of one of our favorite happy hours in town, The Drunken Goat.
With its fun vibe, savvy owners, and amazing food, Mountain Fish House & Oyster Bar is sure to become a staple in the Vail Valley community.
Picking highlights on this unique menu is tough but here are some of our can’t miss favorites.
Lobster rolls come in many forms, Nolan and Doran chose to highlight 2 classics and 1 with a Colorado spin. First is the Maine, served cold with a traditional mayo base. Next, the Connecticut, served hot with butter. Then there is Colorado, served cold with Knapp Ranch honey-cumin vinaigrette and a corn tomato salsa. All are droolworthy!
Do yourself a favor and get the Lobster Sliders so you can try all 3.
They are as tasty as they sound. These crab tater-tots are perfectly crispy on the outside and filled with scrumptious crab on the inside. Served atop homemade tartar sauce and fresh lemon, you’ll want to lick your plate clean.
Coming from both the east and west coast, the daily selection of fresh oysters is a no-brainer. Ordering a mix is a great way to taste the differences between each coast's unique flavors. Served on the half shell, there is no need for shucking. Instead, you are served a beautiful iced platter of ready-to-devour oysters.
Grilled to perfection, this sandwich is an amazing combination of flavors usually only found at sea level. The Grouper sandwich is served with locally made Sendy Hot Sauce, homemade tartar, lettuce, red onion, and tomato.
This fresh, delicious sandwich is hard to beat and one we keep coming back for.
How can you have fresh seafood in the mountains of Colorado? Nolan and Doran have carefully researched and visited oyster farms and lobster fisheries from coast to coast to find the best suppliers.
Daily you can usually find 4 oysters on the menu, 2 from the east coast and 2 from the west coast. The menu is always changing depending on what is available. Feel free to stop by or give them a call to see which oysters they will be serving up on any given day.
The live lobsters come fresh from Seaview Lobster Co. in Kittery, Maine. Mussels are delivered from Bangs Island Mussels in Casco Bay, Maine. Finally, Taylor Shellfish Farms in Washington’s Puget Sound is one of the main providers of oysters. These suppliers were hand-picked, so you can be sure you are not only eating the freshest seafood but the most thoughtfully sourced as well.
Though seafood is the shining star of Mountain Fish House, we can’t forget about the beverages. The craft cocktail list is creative and delicious; their wine selection is thoughtful with a nice range for any taste and budget. Here are a couple noteworthy cocktails from Mountain Fish House you should try.
The City of Lights, made with sparkling rosé, St. Germain and lemon makes this the perfect refreshing cocktail on a hot summer day. If you like a good Oyster Shooter, you have to try the Spicy. Made with jalapeno-cucumber tequila and bloody mary mix this will get your taste buds jumping.
Stop by Mountain Fish House for a post-hike, bike, or work Happy Hour and get in on the fun with $7 glasses of wine and $2 off Oyster Shooters. Happy Hour is every day from 3:30pm - 5:30pm.
